Compared to mirin, Honteri contains less than 0.5% alcohol. Mirin is usually boiled during cooking to evaporate the alcohol. With Honteri, this step is not necessary: you can get the same great flavor with less effort and smaller quantities.
To sweeten dishes, Honteri adds a complex and rounded sweetness that accentuates and balances the flavor compared to sugar. Obtained from a fermented rice seasoning, Honteri contains glucose, maltose and other sugars, as well as glutamic acid, which, when heated together with the amino acids present in the food, reacts to create a sweet and complex umami and a toasted aroma.
