Wild boar stew

Stewed wild boar stew? Not really. Our wild boar stew combines tradition and innovation, reinterpreting the classic mountain recipe with a touch inspired by Japanese cuisine, where wild boar is also a delicacy. The surprisingly delicate meat is marinated in a mixture of soy sauce, mirin, miso and red wine, then cooked at a low temperature in the oven with carrots, onions and a sprinkling of shiitake mushrooms.
