Because of its strong acidity, it is rarely eaten as a fresh fruit, but thanks to its intense aroma, yuzu is used in many recipes, not only in Japan. In Europe, in fact, we find it especially in pastry making to flavor macarons, shortcrust pastry or to soak sponge cake.
In some Asian countries, yuzu is commonly used as an ingredient in packaged snack foods and snack foods.
Yuzu is also excellent for preparing teas, wines, liqueurs and summer cocktails or as a base ingredient and thickener for jams and marmalades. In savoury preparations, yuzu can be sprinkled on tasty salads or used in the preparation of mayonnaise. Its peel can be grated over fish or seafood, perhaps flavouring it with butter. It can also be found in Ramen or as an accompaniment to sushi and sashimi.
